My pantry and fridge are not exactly well stocked this week. In fact, I’m so broke that I hear an echo every time I open my purse. It’s tragic, but what’s a girl to do? Look at other blogs and drool over their delicious creations, of course, and await a more fruitful day (i.e. Friday, ‘cause it’s payday).
Here’s what I’m craving from the world of food blogs right now:
Angela is always creating something fresh and delicious. Well, I assume delicious, though I just realized I’ve never made any of her dishes. A crime, right? This creamy, dreamy cucumber salad may change all of that, though: Refreshing Cucumber Salad with Creamy Mint Dressing. Oh my.
I only very recently discovered Spabettie‘s *gorgeous* blog. Today she is featuring a sandwich made from two delightfully green spinach pancakes. Genius, no? I would dress mine differently – I’m thinking eggless salad or maybe avocado and veggies – but how beautiful is that little guy?
Another recent addition to my blog roll, Garlic and Sea Salt has left me with a tahini-and-roasted-veggies craving: Spring Roasted Vegetables with Tahini Dressing. And panko breadcrumbs? I would never have thought to add those.
Caroline always has tasty-but-simple ideas on her menu. This week, I’m drooling over fresh corn, thanks to her summer salad. I need to grill some corn on the cob soon.
Gena, whose recipes never fail me, posted a simple picture at the bottom of her post of a kale salad. I don’t know what the deal is, but it threw my salivary glands into overdrive.
Alicia makes healthy food absolutely delicious. I can’t stop thinking about her Pumpkin Pie Mousse that is both vegan and totally nutritious. Doesn’t it sound amazing? I think it’ll be dessert next week.
And here’s a bonus one from Angela: Vegetable and Edamame Pasta with Basil Cream Sauce. Gah! How do you do it? I am so, so hungry.
I guess today’s theme is a craving for fresh spring veggies, no? All of these recipes make me wish I had brought something more green and lovely than leftover chili and rice.
So, friends, I have two meals to prepare (one dinner and one lunch) before payday. Food stuff I have is basically the following (plus pantry staples):
- Red lentils
- Quinoa
- Lettuce
- Radishes
- Scallions
- Tahini
- Lemon
- Swiss chard
- Garlic
- Scallions
- Mung bean sprouts
- Blue new potatoes
Who has suggestions? I’m thinking of a veggie-quinoa salad with tahini dressing for lunch tomorrow and this recipe as part of dinner, but I would love other ideas!
